  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cored, seeded, and cut into 1-inch pieces
  • 1 yellow bell pepper, cored, seeded, and cut into 1-inch pieces
  • 1 zucchini, trimmed and cut into 1/2-inch thick half-moons
  • 1/2 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • For the Lemon Dressing:
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the chicken cubes, red bell pepper, yellow bell pepper, zucchini, and red onion.
  3. Drizzle with 2 tablespoons of olive oil, then sprinkle with oregano, thyme, garlic powder, salt, and pepper. Toss to coat evenly.
  4. Spread the chicken and vegetables in a single layer on the prepared baking sheet.
  5. Roast for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp.
  6. While the chicken and vegetables are roasting, prepare the lemon dressing: In a small bowl, whisk together lemon juice, 2 tablespoons olive oil, fresh parsley, Dijon mustard, honey, salt, and pepper.
  7. Once the chicken and vegetables are done, remove them from the oven and drizzle with the lemon dressing. Toss gently to combine.
  8. Serve immediately, optionally garnished with extra fresh parsley.

Notes

  • For extra flavor, marinate the chicken in the olive oil and spices for at least 30 minutes before roasting.
  • You can add other vegetables like cherry tomatoes, eggplant, or mushrooms.
  • Serve over quinoa, rice, or with a side of pita bread.
