- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 red bell pepper, cored, seeded, and cut into 1-inch pieces
- 1 yellow bell pepper, cored, seeded, and cut into 1-inch pieces
- 1 zucchini, trimmed and cut into 1/2-inch thick half-moons
- 1/2 red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- For the Lemon Dressing:
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh parsley
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey
- Salt and freshly ground black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine the chicken cubes, red bell pepper, yellow bell pepper, zucchini, and red onion.
- Drizzle with 2 tablespoons of olive oil, then sprinkle with oregano, thyme, garlic powder, salt, and pepper. Toss to coat evenly.
- Spread the chicken and vegetables in a single layer on the prepared baking sheet.
- Roast for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp.
- While the chicken and vegetables are roasting, prepare the lemon dressing: In a small bowl, whisk together lemon juice, 2 tablespoons olive oil, fresh parsley, Dijon mustard, honey, salt, and pepper.
- Once the chicken and vegetables are done, remove them from the oven and drizzle with the lemon dressing. Toss gently to combine.
- Serve immediately, optionally garnished with extra fresh parsley.
Notes
- For extra flavor, marinate the chicken in the olive oil and spices for at least 30 minutes before roasting.
- You can add other vegetables like cherry tomatoes, eggplant, or mushrooms.
- Serve over quinoa, rice, or with a side of pita bread.
