Ingredients
Scale
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 2 large ripe mangoes, peeled and diced
- 1 (8-ounce) package cream cheese, softened
- 1 (14-ounce) can sweetened condensed milk
- 1/4 cup fresh lime juice
- 1 teaspoon vanilla extract (alcohol-free)
- 1 (8-ounce) container whipped topping, thawed
Instructions
- To make the crust, combine graham cracker crumbs, sugar, and melted butter in a medium bowl. Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate. Chill for 30 minutes.
- For the filling, blend diced mangoes in a food processor until smooth.
- In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the sweetened condensed milk until well combined.
- Stir in the mango puree, lime juice, and vanilla extract.
- Fold in half of the whipped topping until no streaks remain.
- Pour the filling into the chilled pie crust and spread evenly.
- Chill the pie for at least 4 hours, or preferably overnight, until set.
- Before serving, top with the remaining whipped topping and garnish with extra mango slices if desired.
Notes
- Ensure mangoes are ripe for the best flavor and texture.
- For a firmer pie, you can add 1 tablespoon of unflavored gelatin dissolved in 1/4 cup of hot water to the filling mixture before chilling.
- Store leftovers in the refrigerator for up to 3 days.
