Ingredients

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup ketchup
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk

Instructions

  1. Preheat oven to 375°F.
  2. Cook macaroni according to package instructions. Drain and set aside.
  3. In a bowl, mix ground beef, breadcrumbs, egg, 1/2 cup milk, ketchup, salt, pepper, onion powder, and garlic powder.
  4. Press the meat mixture into a baking dish to form the meatloaf base.
  5. In a saucepan, melt butter over medium heat. Stir in flour to make a roux.
  6. Gradually whisk in 2 cups milk until smooth. Cook until thickened.
  7. Remove from heat and stir in 1 1/2 cups cheddar cheese until melted.
  8. Mix the cheese sauce with cooked macaroni. Spread over the meatloaf.
  9. Sprinkle remaining cheese on top.
  10. Bake for 25-30 minutes until bubbly and golden.

Notes

  • Use lean ground beef to reduce grease.
  • Substitute gluten-free pasta if needed.
  • Let it rest for 5 minutes before serving.
