  • 1 pound ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 (15 ounce) can refried beans
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1/2 cup water
  • 1 large bag (about 13 ounces) tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup sliced green onions
  • 1/2 cup sour cream
  • 1/4 cup sliced pickled jalapeños (optional)
  • Salsa, for serving
  • Guacamole, for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat.
  3. Stir in taco seasoning mix, refried beans, black beans, corn, diced tomatoes with green chilies, and water. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until heated through and slightly thickened.
  4. Spread a layer of tortilla chips on a large oven-safe platter or baking sheet.
  5. Spoon half of the beef mixture over the chips. Sprinkle with 1 cup of cheddar cheese and 1/2 cup of Monterey Jack cheese.
  6. Add another layer of tortilla chips, the remaining beef mixture, and the remaining cheeses.
  7. Bake for 10-15 minutes, or until the cheese is melted and bubbly.
  8. Remove from oven and garnish with cilantro, green onions, sour cream, and pickled jalapeños (if using).
  9. Serve immediately with salsa and guacamole on the side.

Notes

  • Adjust the amount of taco seasoning to your taste.
  • For extra spice, add a pinch of cayenne pepper to the beef mixture.
  • You can use your favorite type of cheese or a blend of several.
