Ingredients

  • 1 boneless, skinless chicken breast, diced

  • 1 lime, juiced and zested
  • 1/4 cup chopped cilantro
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup sliced avocado

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add diced chicken, salt, pepper, cumin, and garlic powder. Cook until chicken is fully done, about 6-8 minutes.
  3. In a bowl, mix cooked rice, lime juice, lime zest, and chopped cilantro.
  4. Top the rice with cooked chicken, diced tomatoes, red onion, and sliced avocado.
  5. Serve immediately.
