- 1 pound spaghetti or linguine
- 1 pound asparagus, trimmed and cut into 1-inch pieces
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese (optional)
- Salt and black pepper to taste
Instructions
- Cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
- Add the asparagus to the skillet and cook for 3-5 minutes, or until tender-crisp.
- Stir in the lemon juice, parsley, salt, and pepper.
- Add the cooked and drained pasta to the skillet with the asparagus. Toss to combine.
- If the pasta seems dry, add a few tablespoons of the reserved pasta water until it reaches your desired consistency.
- Serve immediately, topped with grated Parmesan cheese if desired.
Notes
- For a richer flavor, you can add a pinch of red pepper flakes with the garlic.
- Any long pasta shape will work well for this recipe.
- Freshly grated Parmesan cheese offers the best flavor.
