Ingredients

  • 1 lb thinly sliced beef (ribeye or sirloin)
  • 1 tbsp olive oil
  • 1 medium green bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 8 slices provolone cheese
  • 4 low-carb tortillas or wraps

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add sliced beef and cook until browned, about 3-4 minutes.
  3. Add bell pepper, onion, salt, black pepper, and garlic powder. Cook until vegetables are tender, about 5 minutes.
  4. Lay out the low-carb tortillas and place 2 slices of provolone cheese on each.
  5. Divide the beef and vegetable mixture evenly among the tortillas.
  6. Roll the tortillas tightly and place them seam-side down on a baking sheet.
  7. Bake at 350°F for 5-7 minutes until the cheese is melted and the tortillas are slightly crisp.
  8. Serve warm.
