A tender, flavorful pot roast slow-cooked with caramelized onions in a rich broth.

Ingredients

  • 3 lbs beef chuck roast
  • 4 large onions, thinly sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and cook until caramelized (about 15 minutes).
  2. Push onions to the side and sear the roast on all sides until browned (3-4 min per side).
  3. Add garlic, thyme, salt, and pepper. Stir to coat the meat.
  4. Pour in beef broth and Worcestershire sauce. Add bay leaves.
  5. Cover and simmer on low heat for 3-4 hours until meat is fork-tender.
  6. Remove bay leaves before serving.

Notes

  • For deeper flavor, cook onions until dark golden brown.
  • Shred leftovers for sandwiches.
  • Freezes well for up to 3 months.
