Irish Potato Bread, also known as Farls, are traditional griddle-baked potato cakes. They are crispy on the outside and fluffy on the inside, perfect for breakfast or as a side.

  • Total Time: 30 minutes
  • Yield: 4-6 farls 1x

Ingredients

Scale
  • 2 cups mashed potatoes, cold
  • 1/2 cup all-purpose flour, plus more for dusting
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted

Instructions

  1. In a large bowl, combine the cold mashed potatoes, flour, baking soda, and salt. Mix until just combined.
  2. Add the melted butter and mix until a soft dough forms. Do not overmix.
  3. Turn the dough out onto a lightly floured surface. Gently knead a few times until smooth.
  4. Roll the dough into a circle about 1/2 inch thick.
  5. Cut the circle into 4-6 wedges (farls).
  6. Heat a lightly greased griddle or frying pan over medium heat.
  7. Cook the farls for 4-6 minutes per side, or until golden brown and cooked through.
  8. Serve warm.

Notes

  • Using cold mashed potatoes is crucial for the best texture.
  • Do not overwork the dough, as this can make the farls tough.
  • Adjust the cooking time based on the thickness of your farls and the heat of your griddle.
  • These farls are delicious served with butter, jam, or as part of a full breakfast.
