- 4 cups stale bread, cubed
- 4 large apples, peeled, cored, and sliced
- 1/2 cup granulated sugar (plus extra for topping)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 cup currants or raisins (optional)
- 2 cups milk
- 2 large eggs, lightly beaten
- 1 tablespoon unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
- In a large bowl, combine the cubed bread, sliced apples, 1/2 cup sugar, cinnamon, nutmeg, and currants (if using). Toss gently to combine.
- In a separate bowl, whisk together the milk, eggs, and melted butter.
- Pour the milk mixture over the bread and apple mixture. Stir until the bread is fully moistened.
- Transfer the mixture to the prepared baking dish. Sprinkle a little extra sugar over the top.
- Bake for 45-55 minutes, or until the top is golden brown and the apples are tender. A knife inserted into the center should come out clean.
- Serve warm with a dollop of cream or a drizzle of custard.
Notes
- For best results, use day-old or slightly stale bread. Fresh bread can make the pudding too soggy.
- You can adjust the amount of sugar to your preference, especially if your apples are very sweet or tart.
- Feel free to experiment with other spices like allspice or ginger for a different flavor profile.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
