Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/2 cup cocoa powder
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. Mix flour, sugars, cocoa, baking powder, baking soda, and salt in a large bowl.
  3. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
  4. Stir in boiling water. The batter will be thin.
  5. Pour batter into prepared pans.
  6. Bake for 30 to 35 minutes. A toothpick inserted should come out clean.
  7. Cool cakes in pans for 10 minutes. Remove from pans to wire racks. Cool completely.
  8. Beat butter until creamy. Gradually add powdered sugar and cocoa.
  9. Beat in milk and vanilla until smooth.
  10. Frost the cooled cake layers.
