- 1 pound ground beef
- 4 medium potatoes, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 cup shredded cheddar cheese
- 1 can cream of mushroom soup
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a skillet over medium heat. Brown the ground beef and drain excess fat.
- Layer sliced potatoes, onions, and bell peppers in a greased baking dish.
- Top with browned ground beef.
- Mix cream of mushroom soup with milk, salt, and pepper. Pour over the casserole.
- Sprinkle shredded cheese on top.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 15 minutes until golden.
Notes
- Use lean ground beef for less grease.
- Add other vegetables like carrots or peas for variety.
- Store leftovers in an airtight container for up to 3 days.
