Ingredients

  • 4 medium potatoes, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 cup shredded cheddar cheese
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.
  2. Heat olive oil in a skillet over medium heat. Brown the ground beef and drain excess fat.
  3. Layer sliced potatoes, onions, and bell peppers in a greased baking dish.
  4. Top with browned ground beef.
  5. Mix cream of mushroom soup with milk, salt, and pepper. Pour over the casserole.
  6. Sprinkle shredded cheese on top.
  7. Cover with foil and bake for 45 minutes.
  8. Remove foil and bake for an additional 15 minutes until golden.
