Ingredients

- 1 lb flank steak, sliced thin
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- 1 lime, juiced
- 1 cup cooked brown rice
- 1/2 cup black beans, drained
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Add sliced steak and cook for 3-4 minutes until browned.
- Remove steak and set aside.
- In the same skillet, add bell peppers and onion. Cook for 5-6 minutes until softened.
- Return steak to the skillet and sprinkle with fajita seasoning. Stir well.
- Squeeze lime juice over the mixture and cook for another minute.
- Assemble bowls with brown rice, black beans, steak fajita mixture, avocado, and cilantro.
- Serve warm.
Notes
- Marinate the steak in lime juice and seasoning for extra flavor.
- Use any color bell peppers you prefer.
- Serve with salsa or sour cream if desired.
