  • 8 large eggs
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Slice roasted Hatch chiles open, remove seeds, and lay flat in the baking dish.
  3. In a bowl, whisk eggs, milk, flour, baking powder, and salt until smooth.
  4. Pour half the egg mixture over the chiles.
  5. Sprinkle half the cheeses and cilantro over the mixture.
  6. Repeat layers with remaining egg mixture and cheeses.
  7. Bake for 35-40 minutes until golden and set.
  8. Let cool for 5 minutes before serving.
