- 1 pound ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper (any color), sliced
- 1 cup broccoli florets
- 1/2 cup shredded carrots
- 1/4 cup soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon ginger, grated
- 1/2 teaspoon red pepper flakes (optional)
- Cooked rice or noodles, for serving
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Stir in onion and garlic. Cook for 2-3 minutes until fragrant.
- Add bell pepper, broccoli, and carrots. Cook for 5-7 minutes, until vegetables are tender-crisp.
- In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, and red pepper flakes (if using).
- Pour the sauce over the turkey and vegetables. Stir to coat everything evenly.
- Cook for another 2-3 minutes, allowing the sauce to thicken slightly.
- Serve hot over cooked rice or noodles.
Notes
- You can customize the vegetables based on what you have on hand.
- Adjust the amount of red pepper flakes to your spice preference.
- For a thicker sauce, you can mix 1 teaspoon of cornstarch with 1 tablespoon of water and add it to the sauce mixture.
