  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 1/2 cup fresh lemon juice
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper.
  3. Add the chicken pieces and quartered potatoes to the bowl. Toss to coat everything evenly with the marinade.
  4. Arrange the chicken and potatoes in a single layer on a large baking sheet or in a roasting pan.
  5. Pour the chicken broth around the chicken and potatoes.
  6. Bake for 45-55 minutes, or until the chicken is cooked through and the potatoes are tender and golden brown. For extra crispy skin, you can broil for the last 5 minutes.
  7. Garnish with fresh parsley, if desired, and serve immediately.
