- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic, thyme, oregano, salt, and pepper.
- Toss potatoes with half the mixture and spread on a baking sheet.
- Roast potatoes for 20 minutes.
- Coat chicken with the remaining mixture and place on the baking sheet with potatoes.
- Sprinkle parmesan over chicken and potatoes.
- Bake for 20-25 minutes until chicken is cooked through.
- Garnish with parsley before serving.
Notes
- Cut potatoes evenly for consistent cooking.
- Check chicken internal temperature reaches 165°F (74°C).
- For crispier potatoes, broil for 2-3 minutes at the end.
