  • 1 1/2 cups all-purpose flour (plus extra for rolling)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 (8 ounce) package low-fat cream cheese
  • 23 tablespoons maple syrup or honey (or 1 cup powdered sugar)
  • 1 teaspoon vanilla extract
  • Pinch of fine sea salt
  • Fresh strawberries, blueberries, raspberries, blackberries, or other fruit
  • Optional fresh honey for drizzling

Instructions

  1. Heat oven to 350°F. Grease a quarter sheet pan, 9 x 13-inch baking dish, or 12-inch round pizza pan with cooking spray.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat butter and sugar on medium speed until light and fluffy, about 2 minutes.
  4. Add egg, vanilla, and almond extract. Beat until combined, scraping sides as needed.
  5. Add dry ingredients and beat on low speed until just combined. Avoid over-mixing.
  6. Press dough evenly into the prepared pan. Poke a few holes with a fork to prevent bubbling.
  7. Bake for 15-18 minutes until lightly golden. Cool on a wire rack for 20 minutes.
  8. Meanwhile, whisk together cream cheese, sweetener, vanilla, and salt for the frosting.
  9. Spread frosting evenly over the cooled crust.
  10. Top with fresh fruit and drizzle with honey if desired. Slice and serve.

  • Use any seasonal fruit you prefer.
  • For a firmer crust, refrigerate the dough for 30 minutes before baking.
  • The frosting can be adjusted for sweetness with more or less sweetener.
