- 1 1/2 cups all-purpose flour (plus extra for rolling)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup packed light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 (8 ounce) package low-fat cream cheese
- 2–3 tablespoons maple syrup or honey (or 1 cup powdered sugar)
- 1 teaspoon vanilla extract
- Pinch of fine sea salt
- Fresh strawberries, blueberries, raspberries, blackberries, or other fruit
- Optional fresh honey for drizzling
Instructions
- Heat oven to 350°F. Grease a quarter sheet pan, 9 x 13-inch baking dish, or 12-inch round pizza pan with cooking spray.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat butter and sugar on medium speed until light and fluffy, about 2 minutes.
- Add egg, vanilla, and almond extract. Beat until combined, scraping sides as needed.
- Add dry ingredients and beat on low speed until just combined. Avoid over-mixing.
- Press dough evenly into the prepared pan. Poke a few holes with a fork to prevent bubbling.
- Bake for 15-18 minutes until lightly golden. Cool on a wire rack for 20 minutes.
- Meanwhile, whisk together cream cheese, sweetener, vanilla, and salt for the frosting.
- Spread frosting evenly over the cooled crust.
- Top with fresh fruit and drizzle with honey if desired. Slice and serve.
Notes
- Use any seasonal fruit you prefer.
- For a firmer crust, refrigerate the dough for 30 minutes before baking.
- The frosting can be adjusted for sweetness with more or less sweetener.
