- 4 boneless, skinless chicken breasts
- 2 large onions, thinly sliced
- 1 cup white rice
- 2 cups beef or vegetable broth
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil and butter over medium heat. Add onions and cook until caramelized (about 15 minutes).
- Season chicken with salt, pepper, thyme, and garlic powder. Push onions to the side and sear chicken for 3 minutes per side.
- Add rice and broth to the skillet. Stir to combine.
- Bake covered for 25 minutes. Uncover, top with cheese, and bake for 5 more minutes.
Notes
- Use a deep oven-safe skillet.
- For extra flavor, deglaze the pan with 1 tbsp vinegar before adding broth.
