- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/4 cup black olives, sliced
- 2 tbsp capers
- 1/2 tsp red pepper flakes
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté until fragrant (about 30 seconds).
- Add diced tomatoes, olives, capers, and red pepper flakes. Simmer for 5 minutes.
- Season fish fillets with salt and pepper, then place them into the skillet.
- Cover and cook for 8-10 minutes, or until fish flakes easily with a fork.
- Sprinkle with fresh parsley before serving.
Notes
- Use firm white fish for best results.
- Adjust red pepper flakes for desired spiciness.
- Serve with crusty bread or pasta.
