A classic British dessert, Eve’s Pudding features a layer of baked apples topped with a light and fluffy sponge cake. It’s a comforting and easy-to-make dish, perfect for a cozy treat.

Ingredients

  • 450g cooking apples, peeled, cored, and sliced
  • 50g granulated sugar (for apples)
  • 1/2 teaspoon ground cinnamon
  • 100g unsalted butter, softened
  • 100g granulated sugar (for sponge)
  • 2 large eggs
  • 100g self-rising flour
  • 1–2 tablespoons milk

Instructions

  1. Preheat your oven to 180°C (350°F). Grease an ovenproof dish.
  2. Place the sliced apples in the prepared dish. Sprinkle with 50g sugar and cinnamon.
  3. In a mixing bowl, cream together the softened butter and 100g sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Fold in the self-rising flour until just combined. If the mixture is too stiff, add 1-2 tablespoons of milk.
  6. Spoon the sponge mixture evenly over the apples.
  7. Bake for 30-35 minutes, or until the sponge is golden brown and a skewer inserted into the center comes out clean.
  8. Serve warm with custard, cream, or ice cream.

Notes

  • Use Bramley apples for the best results, as they break down nicely during baking.
  • Adjust the amount of sugar according to the sweetness of your apples and your preference.
  • For a richer flavor, you can add a pinch of nutmeg to the apples.
  • If you don’t have self-rising flour, use plain flour with 1 teaspoon of baking powder.
  • Store any leftover pudding in the refrigerator for up to 3 days. Reheat gently before serving.
