Ingredients

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup ketchup, plus more for topping
  • 1/4 cup finely chopped onion
  • 1 egg
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a large bowl, combine ground turkey, breadcrumbs, milk, 1/4 cup ketchup, onion, egg, parsley, garlic powder, salt, and pepper. Mix until just combined, being careful not to overmix.
  3. Shape the mixture into a loaf on the prepared baking sheet or press into the loaf pan.
  4. Spread additional ketchup over the top of the meatloaf, if desired.
  5. Bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Let the meatloaf rest for 5-10 minutes before slicing and serving.

Notes

  • For extra flavor, sauté the onion before adding it to the mixture.
  • You can substitute regular breadcrumbs with whole wheat breadcrumbs for a healthier option.
  • Leftover meatloaf can be stored in an airtight container in the refrigerator for up to 3-4 days.
  • Meatloaf slices are great for sandwiches the next day.
