- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup salsa
- 6 flour tortillas, cut into strips
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 375°F (190°C).
- Brown the ground beef in a skillet over medium heat.
- Drain excess fat and stir in taco seasoning and water. Simmer for 5 minutes.
- Layer half the tortilla strips in a greased baking dish.
- Spread half the beef mixture over the tortillas.
- Top with half the black beans, corn, salsa, and cheeses.
- Repeat layers with remaining ingredients.
- Bake for 20-25 minutes until bubbly and golden.
- Let cool for 5 minutes before serving.
- Garnish with sour cream and cilantro.
Notes
- Use corn tortillas for a gluten-free option.
- Add diced tomatoes or jalapeños for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
