A simple and delicious taco bake casserole that combines all your favorite taco flavors in one easy dish.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup salsa
  • 6 flour tortillas, cut into strips
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat.
  3. Drain excess fat and stir in taco seasoning and water. Simmer for 5 minutes.
  4. Layer half the tortilla strips in a greased baking dish.
  5. Spread half the beef mixture over the tortillas.
  6. Top with half the black beans, corn, salsa, and cheeses.
  7. Repeat layers with remaining ingredients.
  8. Bake for 20-25 minutes until bubbly and golden.
  9. Let cool for 5 minutes before serving.
  10. Garnish with sour cream and cilantro.

  • Add diced tomatoes or jalapeños for extra flavor.
