- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 (15 ounce) can pumpkin puree
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 cup vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- Optional toppings: shredded cheese, sour cream, fresh cilantro
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add ground beef to the pot, breaking it up with a spoon. Cook until browned, then drain any excess fat.
- Stir in pumpkin puree, diced tomatoes, black beans, kidney beans, and vegetable broth.
- Add chili powder, ground cumin, smoked paprika, and cayenne pepper (if using). Stir well to combine.
- Bring the chili to a simmer, then reduce heat to low, cover, and let it cook for at least 30 minutes, or up to 1 hour, allowing the flavors to meld. Stir occasionally.
- Season with salt and black pepper to taste.
- Serve hot with your favorite toppings like shredded cheese, sour cream, or fresh cilantro.
Notes
- For a vegetarian option, omit the ground beef and add an extra can of beans or some cooked lentils.
- Adjust the amount of cayenne pepper to your preferred spice level.
- This chili tastes even better the next day as the flavors deepen.
- Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
