- 4 slices of crusty bread
- 2 large tomatoes, diced
- 200g fresh mozzarella, diced
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat your oven to 200°C (400°F).
- Place the bread slices on a baking tray and toast for 5 minutes or until golden.
- Rub the toasted bread with garlic.
- In a bowl, mix tomatoes, mozzarella, basil, olive oil, and balsamic vinegar.
- Season the mixture with salt and pepper.
- Spoon the tomato mixture onto the toasted bread.
- Serve immediately.

- Use fresh, ripe tomatoes for the best flavor.
- Toast the bread just before serving for extra crunch.
- Add a drizzle of extra olive oil if desired.
