Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas
  • 1 can enchilada sauce
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning and 1/4 cup water to the beef. Stir and simmer for 5 minutes.
  4. Mix in diced onions and bell peppers.
  5. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with the beef mixture and a sprinkle of cheese. Roll them up and place seam-side down in the dish.
  7. Pour the remaining enchilada sauce over the rolled tortillas and top with the rest of the cheese.
  8. Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.

Notes

  • You can use corn tortillas instead of flour tortillas for a gluten-free option.
  • Add a dollop of sour cream or guacamole on top before serving.
  • Leftovers can be stored in an airtight container for up to 3 days.
