Ingredients

  • 500g boneless chicken, cut into pieces
  • 1 can (400ml) coconut milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 tbsp vegetable oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Add onion, garlic, and ginger. Sauté until fragrant.
  3. Add chicken pieces and cook until lightly browned.
  4. Stir in curry powder, salt, pepper, turmeric, cumin, and coriander.
  5. Pour in coconut milk and mix well.
  6. Simmer for 15-20 minutes until chicken is fully cooked.
  7. Garnish with fresh cilantro and serve.
