- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp dried thyme
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix honey, garlic, lemon juice, olive oil, salt, pepper, and thyme.
- Coat cod fillets with the marinade and let sit for 10 minutes.
- Place fillets on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until fish flakes easily with a fork.
- Garnish with fresh parsley before serving.
