- 8 slices of white or whole wheat bread
- 1 large cucumber, thinly sliced
- 4 oz cream cheese, softened
- 2 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Mix cream cheese, dill, lemon juice, salt, and pepper in a bowl.
- Spread the mixture evenly on each bread slice.
- Layer cucumber slices on half of the bread slices.
- Top with the remaining bread slices.
- Cut off the crusts and slice into triangles or squares.
- Serve chilled.
Notes
- Use a mandoline for even cucumber slices.
- Let sandwiches chill for 30 minutes before serving for best flavor.
- Substitute Greek yogurt for cream cheese for a lighter version.
