Easy and flavorful crockpot chicken tacos made with tender shredded chicken and simple ingredients.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 diced onion
  • 1 diced bell pepper
  • 2 minced garlic cloves
  • 1 lime, juiced
  • 8 taco shells or tortillas
  • Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add taco seasoning, chicken broth, onion, bell pepper, and garlic.
  3. Cook on low for 6 hours or high for 3 hours.
  4. Shred chicken with two forks.
  5. Stir in lime juice.
  6. Serve in taco shells with desired toppings.

Notes

  • For extra flavor, sear chicken before adding to crockpot.
  • Leftovers can be stored for up to 3 days.
  • Use beef or turkey bacon instead of regular bacon if preferred.
