- 2 lbs boneless, skinless chicken breasts
- 1 packet taco seasoning
- 1 cup chicken broth
- 1 diced onion
- 1 diced bell pepper
- 2 minced garlic cloves
- 1 lime, juiced
- 8 taco shells or tortillas
- Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream
Instructions
- Place chicken breasts in the crockpot.
- Add taco seasoning, chicken broth, onion, bell pepper, and garlic.
- Cook on low for 6 hours or high for 3 hours.
- Shred chicken with two forks.
- Stir in lime juice.
- Serve in taco shells with desired toppings.
Notes
- For extra flavor, sear chicken before adding to crockpot.
- Leftovers can be stored for up to 3 days.
- Use beef or turkey bacon instead of regular bacon if preferred.
