Ingredients

  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 (14.5 ounce) can crushed tomatoes
  • 1 (13.5 ounce) can coconut milk
  • 1/2 cup beef broth
  • 2 tablespoons curry powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh cilantro, for garnish

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, 1/4 cup cilantro, cumin, coriander, salt, and pepper. Mix until just combined, then form into 1-inch meatballs.
  2. Heat olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides. You may need to do this in batches.
  3. Transfer the browned meatballs to your slow cooker.
  4. In the same skillet, add the chopped onion and cook until softened, about 5-7 minutes.
  5. Add the minced garlic and grated ginger to the skillet and cook for another minute until fragrant.
  6. Stir in the crushed tomatoes, coconut milk, beef broth, curry powder, garam masala, turmeric, and cayenne pepper (if using). Bring the sauce to a simmer.
  7. Pour the sauce over the meatballs in the slow cooker.
  8. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the meatballs are tender and the sauce has thickened.
  9. Garnish with fresh cilantro before serving.

Notes

  • Serve the Crockpot Beef Kofta Curry with basmati rice or naan bread.
  • For extra vegetables, add chopped bell peppers or spinach to the slow cooker during the last hour of cooking.
