- 1 1/2 pounds ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 inch fresh ginger, grated
- 1 (14.5 ounce) can crushed tomatoes
- 1 (13.5 ounce) can coconut milk
- 1/2 cup beef broth
- 2 tablespoons curry powder
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional)
- Fresh cilantro, for garnish
Instructions
- In a large bowl, combine ground beef, breadcrumbs, egg, 1/4 cup cilantro, cumin, coriander, salt, and pepper. Mix until just combined, then form into 1-inch meatballs.
- Heat olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides. You may need to do this in batches.
- Transfer the browned meatballs to your slow cooker.
- In the same skillet, add the chopped onion and cook until softened, about 5-7 minutes.
- Add the minced garlic and grated ginger to the skillet and cook for another minute until fragrant.
- Stir in the crushed tomatoes, coconut milk, beef broth, curry powder, garam masala, turmeric, and cayenne pepper (if using). Bring the sauce to a simmer.
- Pour the sauce over the meatballs in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the meatballs are tender and the sauce has thickened.
- Garnish with fresh cilantro before serving.
Notes
- Serve the Crockpot Beef Kofta Curry with basmati rice or naan bread.
- For extra vegetables, add chopped bell peppers or spinach to the slow cooker during the last hour of cooking.
- Adjust the spice level by increasing or decreasing the amount of cayenne pepper.
