- 1/4 cup unsalted butter, melted
- 1/4 cup hot water
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine rolled oats, flour, baking soda, and salt.
- Add melted butter and hot water to the oat mixture. Mix until a dough forms.
- Turn the dough out onto a lightly floured surface. Knead gently for 1-2 minutes.
- Roll the dough out to about 1/8-inch thickness.
- Cut into desired shapes using a cookie cutter or knife.
- Place oatcakes on the prepared baking sheet.
- Bake for 15-20 minutes, or until golden brown and crispy.
- Let cool completely on a wire rack before serving.

- For a gluten-free option, use certified gluten-free rolled oats and gluten-free all-purpose flour.
- Store oatcakes in an airtight container at room temperature for up to one week.
- Serve with cheese, jam, or your favorite spread.
