Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1 cup breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon (cut into wedges)
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix breadcrumbs, olive oil, garlic powder, paprika, salt, and pepper.
  3. Place cod fillets on the baking sheet and press the breadcrumb mixture onto each fillet.
  4. Bake for 15-18 minutes until the fish flakes easily and the topping is golden.
  5. Squeeze lemon wedges over the cod and sprinkle with parsley before serving.
