A comforting and flavorful chili made with tender chicken, white beans, and a creamy broth. This recipe is perfect for a weeknight meal or a casual gathering.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (4 ounce) can chopped green chilies, undrained
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 (15 ounce) cans great northern beans, rinsed and drained
  • 1 (14.5 ounce) can chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh cilantro, for garnish
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until no longer pink, about 5-7 minutes. Remove chicken from the pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in green chilies, cumin, oregano, chili powder, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
  4. Return chicken to the pot. Stir in great northern beans and chicken broth. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes to allow flavors to meld.
  5. Stir in heavy cream and cook for another 5 minutes, or until heated through. Do not boil after adding cream.
  6. Season with salt and black pepper to taste.
  7. Ladle into bowls and garnish with fresh cilantro. Serve hot.

Notes

  • For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes.
  • You can use rotisserie chicken for a quicker preparation. Shred the chicken and add it in step 4.
  • Serve with your favorite toppings like shredded cheese, sour cream, or tortilla chips.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
