- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp butter
- 2 tbsp flour
- Chopped green onions for garnish
Instructions
- Melt butter in a large pot over medium heat.
- Add onions and garlic, cook until softened.
- Stir in flour and Cajun seasoning, cook for 1 minute.
- Gradually whisk in broth, then add potatoes.
- Bring to a boil, reduce heat, and simmer until potatoes are tender (about 15 minutes).
- Use an immersion blender to partially blend the soup.
- Stir in heavy cream and heat through.
- Season with salt, pepper, and paprika.
- Garnish with green onions before serving.
Notes
- Adjust Cajun seasoning to your preferred spice level.
- For thicker soup, blend more potatoes.
- Store leftovers in the refrigerator for up to 3 days.
