Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 8 oz pasta (penne or fettuccine)
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 bell pepper, sliced
  • 1/2 onion, sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a pan and cook chicken until browned and cooked through. Remove from pan.
  4. In the same pan, sauté bell pepper, onion, and garlic until softened.
  5. Add heavy cream, chicken broth, and Parmesan. Stir until sauce thickens.
  6. Return chicken to the pan and mix with the sauce.
  7. Toss in cooked pasta and stir to combine.
  8. Serve hot with extra Parmesan if desired.

Notes

  • Adjust Cajun seasoning to taste for more or less spice.
  • Use gluten-free pasta if needed.
  • Store leftovers in an airtight container for up to 3 days.
