Ingredients

- 2 boneless, skinless chicken breasts, sliced
- 8 oz pasta (penne or fettuccine)
- 1 tbsp olive oil
- 1 tbsp Cajun seasoning
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 bell pepper, sliced
- 1/2 onion, sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season chicken with Cajun seasoning, salt, and pepper.
- Heat olive oil in a pan and cook chicken until browned and cooked through. Remove from pan.
- In the same pan, sauté bell pepper, onion, and garlic until softened.
- Add heavy cream, chicken broth, and Parmesan. Stir until sauce thickens.
- Return chicken to the pan and mix with the sauce.
- Toss in cooked pasta and stir to combine.
- Serve hot with extra Parmesan if desired.
Notes
- Adjust Cajun seasoning to taste for more or less spice.
- Use gluten-free pasta if needed.
- Store leftovers in an airtight container for up to 3 days.
