Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Season chicken with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat and cook chicken until browned, about 5-6 minutes per side. Remove and set aside.
  3. In the same skillet, sauté onion, bell pepper, and garlic until softened.
  4. Add rice, paprika, and chicken broth. Stir well and bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Stir in heavy cream and return chicken to the skillet. Cook for another 5 minutes.
  7. Serve hot.

Notes

  • Adjust Cajun seasoning to your preferred spice level.
  • For a lighter version, replace heavy cream with coconut milk.
  • Store leftovers in an airtight container for up to 3 days.
