  • 2 cups butternut squash (diced)
  • 2 cups fresh spinach

  • 3 cloves garlic (minced)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned.
  3. Add garlic and butternut squash to the skillet. Cook until squash softens.
  4. Stir in spinach and cook until wilted.
  5. Pour in heavy cream and bring to a simmer.
  6. Add Parmesan cheese, salt, black pepper, and red pepper flakes. Stir until creamy.
  7. Toss in cooked pasta and mix well.
