- 1 lb Italian sausage (casings removed)
- 12 oz pasta (penne or fusilli)
- 2 cups butternut squash (diced)
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic (minced)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp crushed red pepper flakes
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned.
- Add garlic and butternut squash to the skillet. Cook until squash softens.
- Stir in spinach and cook until wilted.
- Pour in heavy cream and bring to a simmer.
- Add Parmesan cheese, salt, black pepper, and red pepper flakes. Stir until creamy.
- Toss in cooked pasta and mix well.
- Serve warm with extra Parmesan if desired.

- Use gluten-free pasta for a gluten-free version.
- Substitute turkey sausage for a lighter option.
- Add more red pepper flakes for extra heat.
