- 1 cup smoked mozzarella cheese, shredded
- 1/2 cup fontina cheese, shredded
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp crushed red pepper flakes (optional)
- 1 tbsp butter
- 1 tbsp all-purpose flour
- 1/4 cup white wine (optional)
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Melt butter in a saucepan over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Stir in flour to make a roux and cook for 1 minute.
- Slowly whisk in heavy cream until smooth.
- Add white wine (if using) and continue whisking.
- Reduce heat to low and gradually stir in shredded cheeses until fully melted.
- Season with salt, black pepper, and red pepper flakes.
- Transfer to a serving dish and garnish with fresh parsley.
- Serve warm with bread or vegetables for dipping.
Notes
- For a smokier flavor, use more smoked mozzarella.
- If the fonduta thickens too much, thin it with a little extra cream.
- Substitute fontina with provolone if unavailable.
