Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 red bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together coconut milk, red curry paste, fish sauce, lime juice, and brown sugar.
  3. Place cod fillets in a baking dish and pour the coconut curry sauce over them.
  4. Add sliced bell pepper, onion, garlic, and ginger around the fish.
  5. Bake for 20-25 minutes until the fish is cooked through and flakes easily.
  6. Garnish with fresh cilantro before serving.

Notes

  • You can substitute cod with other white fish like haddock or tilapia.
  • Adjust the amount of red curry paste for more or less heat.
