Ingredients

- 1 lb chorizo sausage
- 1 cup diced potatoes
- 1/2 cup chopped onion
- 1/2 cup diced green chiles
- 4 large eggs
- 1/2 cup shredded cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chorizo and cook until browned.
- Add potatoes and onion, cook until potatoes are tender.
- Stir in green chiles.
- Create wells in the mixture and crack eggs into them.
- Cover and cook until eggs reach desired doneness.
- Sprinkle cheese on top and let melt.
- Serve hot.
Notes
- Use fresh chorizo for best flavor.
- Adjust spice level with more or fewer chiles.
- Top with sour cream or avocado if desired.
