- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 1 cup creamy peanut butter
- 8 ounces cream cheese, softened
- 1 1/4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 (8 ounce) container whipped topping, thawed
- 1/2 cup heavy cream
- 4 ounces semi-sweet chocolate, chopped
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine chocolate cookie crumbs and melted butter. Press mixture into the bottom of a 9-inch pie plate.
- Bake for 8 to 10 minutes, then let cool completely.
- In a large bowl, beat peanut butter, cream cheese, powdered sugar, and vanilla extract until smooth.
- Fold in whipped topping.
- Pour filling into the cooled crust.
- Refrigerate for at least 4 hours, or until firm.
- In a small saucepan, heat heavy cream until simmering. Remove from heat and stir in chopped semi-sweet chocolate until melted and smooth. Let cool slightly.
- Pour ganache over the top of the pie.
- Refrigerate for another 30 minutes, or until ganache is set.
Notes
- For best results, use full-fat cream cheese.
- Ensure the pie is thoroughly chilled before serving for easy slicing.
- Garnish with extra chocolate shavings or chopped peanuts, if desired.
