Ingredients

  • Salt and pepper to taste
  • 4 slices bread
  • Lettuce leaves (optional)

Instructions

  1. In a bowl, mix shredded chicken, mayonnaise, celery, red onion, lemon juice, and Dijon mustard.
  2. Season with salt and pepper to taste.
  3. Toast the bread slices lightly if desired.
  4. Spread the chicken salad mixture evenly on two slices of bread.
  5. Add lettuce leaves if using.
  6. Top with the remaining bread slices.
  7. Cut sandwiches in half and serve.
