- 2 cups cooked chicken, shredded
- 1/2 cup mayonnaise

- 4 slices bread
- Lettuce leaves (optional)
Instructions
- In a bowl, mix shredded chicken, mayonnaise, celery, red onion, lemon juice, and Dijon mustard.
- Season with salt and pepper to taste.
- Toast the bread slices lightly if desired.
- Spread the chicken salad mixture evenly on two slices of bread.
- Add lettuce leaves if using.
- Top with the remaining bread slices.
- Cut sandwiches in half and serve.
