- 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 1/2 lbs small potatoes, quartered
- 1 head broccoli, cut into florets
- 2 tbsp olive oil
- 1 (1 oz) packet ranch seasoning mix
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the chicken, potatoes, and broccoli.
- Drizzle the olive oil over the chicken and vegetables.
- Sprinkle the ranch seasoning mix and black pepper over the mixture. Toss everything until evenly coated.
- Spread the chicken and vegetables in a single layer on the prepared baking sheet.
- Roast for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender. Stir halfway through cooking for even browning.
- Serve hot and enjoy!
Notes
- You can substitute sweet potatoes for regular potatoes.
- Feel free to add other vegetables like bell peppers or carrots.
- Adjust the amount of ranch seasoning to your taste.
