  • 12 ounces dried flat rice noodles
  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1/4 cup tamarind paste
  • 1/4 cup fish sauce
  • 1/4 cup brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional)
  • 1 cup bean sprouts
  • 1/2 cup chopped roasted peanuts
  • 1/4 cup chopped fresh cilantro
  • 2 green onions, sliced
  • Lime wedges, for serving

Instructions

  1. Soak rice noodles in warm water for 20-30 minutes, or until softened but still firm. Drain and set aside.
  2. Heat vegetable oil in a large wok or skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the wok and set aside.
  3. Add minced garlic to the wok and cook for 30 seconds until fragrant.
  4. Pour in the beaten eggs and scramble until just set.
  5. Return the cooked chicken to the wok. Add the drained noodles.
  6. In a small bowl, whisk together tamarind paste, fish sauce, brown sugar, rice vinegar, and sriracha (if using) to create the sauce.
  7. Pour the sauce over the noodles and chicken. Toss to coat everything evenly.
  8. Add bean sprouts and half of the chopped peanuts. Cook for another 2-3 minutes, tossing constantly, until the noodles are tender and the sauce has thickened.
  9. Remove from heat. Stir in fresh cilantro and green onions.
  10. Serve immediately, garnished with the remaining peanuts and lime wedges.

Notes

  • Adjust the amount of sriracha to your spice preference.
  • For extra crunch, you can add some chopped carrots or bell peppers.
  • If you cannot find tamarind paste, you can substitute with a mixture of lime juice and a little brown sugar.
