- 1 pound boneless, skinless chicken breasts or thighs, cut into thin strips
- 8 ounces lo mein noodles
- 2 tablespoons vegetable oil, divided
- 1 cup sliced carrots
- 1 cup sliced bell peppers (any color)
- 1 cup snow peas
- 1/2 cup sliced yellow onion
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup soy sauce (low sodium)
- 2 tablespoons oyster sauce (or vegetarian stir-fry sauce)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1/4 cup chicken broth
- Green onions, chopped, for garnish
Instructions
- Cook lo mein noodles according to package directions. Drain and set aside.
- In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, cornstarch, and chicken broth. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add carrots, bell peppers, snow peas, and onion. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Add minced garlic and grated ginger to the skillet. Stir-fry for 1 minute until fragrant.
- Return cooked chicken to the skillet. Add cooked lo mein noodles.
- Pour the prepared sauce over the chicken and noodles. Toss to coat everything evenly.
- Cook for 2-3 minutes, stirring constantly, until the sauce thickens and coats the noodles.
- Garnish with chopped green onions before serving.
Notes
- Adjust the amount of vegetables to your preference.
- For extra spice, add a pinch of red pepper flakes with the garlic and ginger.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
