Ingredients

  • 2 boneless chicken breasts
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup chicken broth
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 medium potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tbsp butter
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in a pan over medium heat. Add chicken breasts and cook for 6-7 minutes per side until golden. Remove and set aside.
  2. In the same pan, melt butter. Add minced garlic and sauté for 1 minute.
  3. Stir in flour and cook for another minute.
  4. Slowly pour in chicken broth while stirring to avoid lumps.
  5. Season with salt and pepper. Simmer for 3-4 minutes until thickened.
  6. Return chicken to the pan and coat with gravy. Simmer for 5 minutes.
  7. Meanwhile, boil potatoes until tender.
  8. Drain potatoes, add milk and butter, then mash until smooth.
  9. Top mashed potatoes with shredded cheese.
  10. Serve chicken with gravy alongside cheesy mashed potatoes.

Notes

  • For extra flavor, add a pinch of thyme to the gravy.
  • Replace cheddar with mozzarella if preferred.
  • Use beef bacon bits as garnish for a smoky taste.
