- 2 boneless chicken breasts
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tbsp flour
- 1 cup chicken broth
- 1/4 tsp salt
- 1/4 tsp black pepper
- 4 medium potatoes, peeled and cubed
- 1/2 cup milk
- 2 tbsp butter
- 1/2 cup shredded cheddar cheese
Instructions
- Heat olive oil in a pan over medium heat. Add chicken breasts and cook for 6-7 minutes per side until golden. Remove and set aside.
- In the same pan, melt butter. Add minced garlic and sauté for 1 minute.
- Stir in flour and cook for another minute.
- Slowly pour in chicken broth while stirring to avoid lumps.
- Season with salt and pepper. Simmer for 3-4 minutes until thickened.
- Return chicken to the pan and coat with gravy. Simmer for 5 minutes.
- Meanwhile, boil potatoes until tender.
- Drain potatoes, add milk and butter, then mash until smooth.
- Top mashed potatoes with shredded cheese.
- Serve chicken with gravy alongside cheesy mashed potatoes.
Notes
- For extra flavor, add a pinch of thyme to the gravy.
- Replace cheddar with mozzarella if preferred.
- Use beef bacon bits as garnish for a smoky taste.
