  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken pieces and cook until lightly browned, about 5-7 minutes. Remove chicken and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 8-10 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth. Add dried thyme, dried rosemary, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer.
  5. Return the cooked chicken to the pot.
  6. While the broth is simmering, prepare the dumplings. In a medium bowl, whisk together flour, baking powder, and 1/2 teaspoon salt.
  7. In a separate small bowl, whisk together milk and melted butter.
  8. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  9. Drop spoonfuls of dumpling dough into the simmering broth. Cover the pot and cook for 15-20 minutes, or until the dumplings are cooked through and fluffy.
  10. Garnish with fresh parsley before serving.
