Ingredients

  • 2 cups broccoli florets
  • 1 cup diced carrots
  • 1 cup diced bell peppers
  • 1 cup sliced mushrooms
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup heavy cream
  • 2 eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Steam the broccoli, carrots, and bell peppers until slightly tender.
  3. In a large bowl, mix the steamed vegetables with mushrooms.
  4. In another bowl, whisk together eggs, heavy cream, garlic powder, onion powder, salt, and pepper.
  5. Layer half the vegetables in a baking dish, then sprinkle half the cheese on top.
  6. Repeat with the remaining vegetables and cheese.
  7. Pour the egg mixture evenly over the vegetables.
  8. Bake for 30-35 minutes until the top is golden and bubbly.
  9. Let cool for 5 minutes before serving.
