- 2 cups broccoli florets
- 1 cup diced carrots
- 1 cup diced bell peppers
- 1 cup sliced mushrooms
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup heavy cream
- 2 eggs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Steam the broccoli, carrots, and bell peppers until slightly tender.
- In a large bowl, mix the steamed vegetables with mushrooms.
- In another bowl, whisk together eggs, heavy cream, garlic powder, onion powder, salt, and pepper.
- Layer half the vegetables in a baking dish, then sprinkle half the cheese on top.
- Repeat with the remaining vegetables and cheese.
- Pour the egg mixture evenly over the vegetables.
- Bake for 30-35 minutes until the top is golden and bubbly.
- Let cool for 5 minutes before serving.
Notes
- Use any vegetables you prefer.
- For extra crispiness, broil for 2-3 minutes at the end.
- Store leftovers in the fridge for up to 3 days.
