This cheesy taco bake combines seasoned ground beef, a creamy sauce, and plenty of cheese for a satisfying family meal. It’s easy to prepare and can be customized with your favorite taco toppings.

Ingredients

  • 1 pound ground beef
  • 1 (1 ounce) packet taco seasoning
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 (4 ounce) can diced green chiles, drained
  • 10 (6 inch) corn tortillas
  • 2 cups shredded Mexican cheese blend
  • 1/4 cup chopped fresh cilantro (optional, for garnish)
  • Salsa, sour cream, or other desired toppings (for serving)

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. In a large skillet, cook ground beef over medium heat until browned and crumbled. Drain off excess fat. Stir in taco seasoning according to package directions.
  3. In a medium bowl, whisk together cream of mushroom soup and milk until smooth. Stir in the diced green chiles.
  4. Spread a thin layer of the soup mixture on the bottom of the prepared baking dish.
  5. Arrange 5 corn tortillas over the soup mixture, overlapping slightly if necessary.
  6. Spread half of the seasoned ground beef over the tortillas.
  7. Sprinkle 1 cup of the shredded cheese over the ground beef.
  8. Top with another layer of the remaining 5 corn tortillas.
  9. Spread the remaining ground beef over the tortillas.
  10. Pour the remaining soup mixture over the ground beef.
  11. Sprinkle with the remaining 1 cup of shredded cheese.
  12. Bake for 20-25 minutes, or until cheese is melted and bubbly and the casserole is heated through.
  13. Let stand for 5 minutes before serving. Garnish with cilantro if desired and serve with salsa, sour cream, or other preferred toppings.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the ground beef.
  • You can use flour tortillas instead of corn tortillas.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
